Ingredients:

1/2 cup Squash (cubed)
1 cup Qunioa (cooked)
1 tbsp Cilantro chopped
1/4 cup Red Onion chopped
1 tsp onion powder
1/2 tsp Cayenne pepper
1 tbsp grape seed oil
2 Green or Red Bell Peppers
Sea Salt to taste

HOW TO EAT CLEAN BLOG BUTTON
Directions:
  • Add oil to pan on high heat and spread evenly around the pan.
  • Add onion, garlic and cilantro and saute’, stirring for about 2 minutes.
  • Add Quinoa and cook for 3 more minutes slowly folding ingredients in the pan.
  • Add onion powder and Cayenne pepper and stir.
  • Cut bell peppers in half and remove the insides.
  • Stuff each pepper with the above mixture
  • Top with bread crumbs or black pepper
  • Bake at 375 for 30 mins.
  
Note: This should make about 4 halve. I suggest doubling the ingredients to make more.
